To build a sustainability society, we propose "Edo sustainability" as a future system design that connects the past with the future.
In Japanese history the 265 years from 1603 (when Tokugawa Ieyasu became the generalissimo) to 1868 are called the Edo period. Edo is the former name for what is now Tokyo.
The goal of EdoMirai Food System Design Lab is to discover the unknown history and culture of food rooted in each local area, and propose a future system design by considering chronological (historical) and/or spatial (regional) contexts through collaboration with historiography and systems engineering researchers.

The Ultimate Sustainable City Edo
Why did Edo became the ultimate sustainable city? In the history of Japan, the 265-year period between 1603 (when Tokugawa Ieyasu became the generalissimo) is called the Edo Period. Edo is the former name for what is now Tokyo.

· In the long history of Japan (Heian, Kamakura, Muromachi, Sengoku periods), several "cities" appeared
· Movement of "capital" by the change of administration
· Japan has made a number of “cities” and Edo is a completed society of the city

Food cultures born in the local areas cross their path and flourish in Edo (Tokyo).
Edo’s sustainability is not restricted to the Edo period and the Edo region.
An ideal society with Edo sustainability practices in every local area can emerge and develop through interactions of the people in the areas.

Beyond Sustainability - From "Waste not, want not" to "Just right in everything"–

Since ancient times, Japanese people have devised measures to eat without waste, finely processing and cooking food without wasting the ingredients. For example, processing salmon and fish eggs can be cited as a traditional Japanese food culture.

Japanese people have devised measures to effectively live prosperously in limited areas. They have eaten multiple parts obtained from one ingredient by various processing methods without wasting. Thus technologies such as fermentation and dry matter emerged.

What  we mean bu ‘just right!’ , for example
· Familiarity (to that person)
· Easiness to eat and digest (for that person)
· Pleasing taste (to that person)
· Familiar seasoning (to that person)
· Beneficial food for our body
Choice of a meal that the body wants unconsciously for detoxification and health, we have chosen a meal that the body wants unconsciously.

Eating the familiar things, those familiar with and fit to the body may be the happiness of the future food.

Context in just right to see in lunch culture

How to enjoy cherry blossoms in Edo and Kyoto is different. The activity of enjoying cherry blossoms in Edo city are created according to the city planning of Edo. In the culture of enjoyment of cherry blossoms in Edo, people sit on meals looking carefully at the cherry blossoms.

Culture of lunchbox
· Packing meals into boxes
· Enjoy cooking even in the cold state
· The shape of onigiri (rice ball) is also different in the east and west

The culture of Edo's lunch box can be recognized a culture that we enjoy packing up. The origin of the box lunch is in the Heian period. At that time, Japanese ate cold rice balls. Since the Kamakura period, the culture of lunchboxes deepened as a food to bring for battles. After that, in the Edo era, a box lunch became as a general food.

1) tasty even when eaten cold,
2) its soup broth is unlikely to come out; its shape is unlike to break down,
3) unlikely to go bad
